Varnishing

When I built my 1st MiniMAX I used Marine Spar Varnish. As I recall I used 2 coats that were thinned to (hopefully) help the 1st coat penetrate the wood thoroughly to seal it and then a thinned light topcoat.

Now, it seems that everything on the shelf in local stores is Spar Urethane. I've always viewed Urethane as more of a "topical" coating rather than "penetrating". Could I use a Spar Urethane but still thin maybe 25-ish % with mineral spirits to aid penetration and then follow with a light thinned 2nd coat as deemed needed? Seems like a minor issue, but I also don't want a "build up" of varnish thickness as that would just add a couple ounces because I'm cutting every unnecessary ounce out of my current build as I can to make legal 103 regulations.
